Coconut Milk Popsicles

Tiny is a coconut milk lover…but not to drink! No, Tiny prefers her coconut milk frozen into popsicles with very little added to it. Plain old frozen coconut milk is just fine by her. However, I do like to mix it up a bit as Tiny is known for keeping me on my toes and suddenly requesting a “colored popsicle.”

You would think that it would be pretty simple to create a delicious coconut milk popsicle right? Well, in theory it is but when coconut milk freezers, the flavor of the milk itself is somehow enhanced, often times overpowering the flavors in your popsicle add-ins. There seems to be a pretty fine balance when it comes to ingredients.

Today I am sharing Tiny’s three favorite “colored coconut milk popsicle” recipes. Tiny is NOT a sweet lover but I assure you, she gobbles these healthy treats down any time of year. And I don’t feel bad about it at all. That coconut milk packs a nutrient rich punch and I carefully select the add-ins to ensure the popsicles stay low in sugar and completely nourishing!

Ingredients
  1. 1 can full fat coconut milk (I use the Native Forest Brand as the cans are BPA free. ).
  2. 1 1/2 cups frozen cherries (frozen is better – trust me on this one)
  3. A splash of vanilla extract
Instructions
  1. Put all of the ingredients in the blender and give it a whir!
  2. Pour into stainless steel (or whatever you have on hand) popsicle molds.
  3. Allow to freeze for a minimum of 6 hours before serving.

Pineapple Me Crazy

Ingredients
  1. 1 can full fat coconut milk
  2. 2 cups pineapple chunks (fresh is great but frozen or canned is ok too)
  3. 1 tablespoon honey (it actually enhances the flavor without making it too sweet)
Instructions
  1. Put all of the ingredients in the blender and give it a whir!
  2. Pour into stainless steel (or whatever you have on hand) popsicle molds.
  3. Allow to freeze for a minimum of 6 hours before serving.

Coconutty Creamsicle
I actually love this flavor combo myself! But it is a bit more time consuming to make!

  1. 1 can full fat coconut milk
  2. 1 1/2 cups fresh squeezed orange juice
  3. 2 medium ripe bananas
  4. 1 tablespoon vanilla extract
  5. Optional – to make this super nutrient dense, you can add in 2 pastured egg yolks
Instructions
  1. Put all of the ingredients in the blender and give it a whir!
  2. Pour into stainless steel (or whatever you have on hand) popsicle molds.
  3. Allow to freeze for a minimum of 6 hours before serving.

  2. Yummy!!! I haven’t thought of this!!! I drink coconut milk, but my Granddaughter, Hobbit Girl-Child, doesn’t like it yet. She loves popsicles, so I am def going to make these!!! She loves blueberries!
